Red Chili Salmon Tartar

Kitchen time…I miss it sometimes, unfortunately I don’t get to spend as much time there as I would like. But then there are those few days each month where I get the chance to throw on my jacket, creating new dishes to pair with our beers. This week I spent a couple of days working on recipes for Breckenridge Brewery’s Regal Pilsner. Pilsner is probably my favorite type of beer as long as it has body and bold flavor, this one fits the bill. I wanted to create a clean dish that wasn’t spicy but had a little zing to it.

This is basically a salsa with a little extra lime juice and fresh Scottish salmon. Very easy to make and it makes a pilsner sing.

Red Chile Salmon Tartar (Pair with Breckenridge Brewery Regal Pilsner)

Serves 6-8

1 ripe avocado, diced
1 med cucumber, peeled, seeded and diced
1 pasilla pepper, seeded and diced
¼ medium red onion, julienned
½ bunch cilantro, chopped
Zest of 1 lime
Juice of 2 limes
1 tsp. dark chili powder
1 tsp. cumin, ground
2 Tbs. olive oil
1 lb Scottish (sushi grade) salmon, diced
Kosher salt and fresh ground black pepper

Method:
1. Combine all ingredients except for the salmon and mix well.
2. Fold in the diced salmon.
3. Chill for one hour.
4. Serve with tortilla chips and Breckenridge Brewery Regal Pilsner
