Guava Barbeque Sauce

 

 

 

Ingredients

2 red onions, sliced

2 Tbs. garlic, chopped

2 Tbs. olive oil

½ cup sherry vinegar

¾ cup dark rum

¼ cup soy sauce

4 cups course ground tomato

4 cups guava puree

½ cup raw sugar

½ tsp. Cumin

½ tsp. Allspice

½ tsp. White pepper

1 tsp. Cayenne pepper

Salt to taste

 

Method

  1. In a heavy bottom saucepot, cook the garlic and onions in the olive oil over medium heat until the garlic starts to brown.

  2. Add the ground tomato and continue cooking until the tomato looks dry.

  3. Add the rum, soy sauce, raw sugar and cook for 5 minutes.

  4. Add the guava puree and remaining spices.

  5. Cover and simmer over low heat for 30 minutes.

  6. Strain through a china cap or fine mesh sieve.

  7. Season with salt to taste.
