Salt Cod Cakes (Brandade Cakes)

 

 

 

Ingredients:

4 # Idaho potatoes, peeled and cooked
1# salt cod, drained, and soaked in milk for 24 hours
6 eggs
6 stalks green onions, diced
2 Tbsp. parsley, chopped
Salt and pepper to taste

Method:

  1. Mix all ingredients.
  2. Transfer to a 2" deep half hotel pan.
  3. Let chill.
  4. Cut into shape.
  5. Pan Fry and finish in a 350° oven.
