Dried Fruit Compote

 

 

 

Ingredients:

5# dried apricots                                                     
5# pitted dates
3# golden raisins
6 apples, peeled, cored, thinly sliced
1 3/4 gallons apple cider
6 cups red wine
12 cups sugar
juice of 5 lemons

Method:

  • Combine all ingredients in a heavy bottom sauce pot.
  • Bring to boil.
  • Reduce heat and simmer from 50-60 minutes, or until compote has thickened well.
  • Adjust seasoning with lemon juice and cool quickly.
