Kalamata Olive Vinaigrette

 

 

Ingredients:
6 cups Kalamata Olives
4 Tbs. fresh garlic, minced
4 Tbs. shallots, minced
3 Tbs. Dijon mustard
1 cup red wine vinegar
4 cups blended oil
2 Tbs. parsley, chopped fine
Salt and pepper to taste

 

Method:

  1. In a blender, combine the olives, garlic, shallots mustard and vinegar.

  2. Puree smooth, remove from blender to a mixing bowl.

  3. Whisk in blended oil.

  4. Season with salt pepper and parsley.
