Kalamata Olive Vinaigrette

Ingredients:
- 6 cups
Kalamata Olives
- 4 Tbs.
fresh garlic, minced
- 4 Tbs.
shallots, minced
- 3 Tbs.
Dijon mustard
- 1 cup red
wine vinegar
- 4 cups
blended oil
- 2 Tbs.
parsley, chopped fine
- Salt
and pepper to taste

Method:

In
a blender, combine the olives, garlic, shallots mustard and vinegar.

Puree
smooth, remove from blender to a mixing bowl.

Whisk
in blended oil.

Season
with salt pepper and parsley.
