Black Pepper Balsamic Vinaigrette

 

 

 

Ingredients:

8 cups balsamic vinegar
2 cups dijon mustard
2 cups shallots, minced
1 cup fresh ground black pepper
1 1/2 gal. blended oil
salt to taste

 

Method:

  • Allow the shallots to macerate in the vinegar for 2 minutes.

  • Add the mustard to the vinegar.

  • Whisk in the oil slowly enough to let the vinaigrette emulsify.

  • Add the black pepper.

  • Season with salt to taste.
