Pesto Aioli

 

 

Ingredients

5 oz. basil leaves
1 Tbsp. garlic, chopped
½ cup parmesan, grated
1 Tbsp. kosher salt
¼ cup pine nuts, toasted
Olive Oil, as needed
4 oz pasteurized egg yolks
1 qt blended oil
2 oz. lemon juice

 

Method

  1. To make aioli, put yolks in food processor with lemon juice.

  2. Blend for one minute.

  3. Put basil, garlic, pine nuts and parmesan in food processor

  4. Puree until smooth.

  5. Slowly add the blended oil until fully incorporated.

  6. Season to taste with kosher salt.
