Pineapple Red Chile Chutney

| Ingredients:
- 4
pineapples, diced
- 4 red
peppers, diced
- 2 T.
crushed red pepper
- 1 cup
brown sugar
- 1/2 cup
white wine vinegar
- 1 T.
chopped garlic
- 2 t.
ground cumin
- salt and pepper to taste

Method:
- Combine the
pineapples and crushed red pepper in a pan and cook over medium heat until
the juice is released from the pineapple.
- Combine the sugar, vinegar, garlic and
cumin and allow the sugar to dissolve.
- Add to the
pineapples and continue cooking until pineapples are tender but not mush.
- Place all in a
strainer and allow the juice to drain out completely.
- Reduce the
remaining liquid to syrup and return back to the pinapple.
- Add the peppers
to the pineapple and mix well till all the fruit is coated with the syrup.
- Season with salt and pepper.
