Pineapple Red Chile Chutney

 

 

Ingredients:

4 pineapples, diced
4 red peppers, diced
2 T. crushed red pepper
1 cup brown sugar
1/2 cup white wine vinegar
1 T. chopped garlic
2 t. ground cumin
salt and pepper to taste

 

Method:

  1. Combine the pineapples and crushed red pepper in a pan and cook over medium heat until the juice is released from the pineapple.
  2. Combine the sugar, vinegar, garlic and cumin and allow the sugar to dissolve.
  3. Add to the pineapples and continue cooking until pineapples are tender but not mush.
  4. Place all in a strainer and allow the juice to drain out completely.
  5. Reduce the remaining liquid to syrup and return back to the pinapple.
  6. Add the peppers to the pineapple and mix well till all the fruit is coated with the syrup.
  7. Season with salt and pepper.
