Plantain Soup

 

 

Ingredients:

8 yellow onions, diced
30# plantains, peeled
2 habanero, minced
miso stock (miso paste and water)
1/4 cup cinnamon
1/4 cup nutmeg
lime juice, to taste
1/2 gallon heavy cream
blended oil
salt and white pepper, to taste

 

Method:

  1. Sweat the onions and habanero in a little oil.
  2. Add the cinnamon and nutmeg.
  3. Add the plantains and cover with miso stock.
  4. Simmer till plantains are soft and puree with the burr mixer.
  5. Season with lime juice, salt and pepper.
  6. Finish with heavy cream.
