Plantain Soup
Ingredients:
8 yellow onions, diced
30# plantains, peeled
2 habanero, minced
miso stock (miso paste and water)
1/4 cup cinnamon
1/4 cup nutmeg
lime juice, to taste
1/2 gallon heavy cream
blended oil
salt and white pepper, to taste

weat the onions and habanero in a little oil.
Add the cinnamon and nutmeg.

dd the plantains and cover with miso stock.
S
immer till plantains are soft and puree with the burr mixer.
S
eason with lime juice, salt and pepper.
F
inish with heavy cream.
