Port Wine Vinaigrette

 

Ingredients:
2 btl. port wine
4 shallots, minced
3/4 cup red wine vinegar
2 Tbs. Dijon mustard
4 cups blended oil
Salt and pepper to taste

 

Method:

  1. Reduce the port wine over a high flame until it measures 2 1/4 cups.

  2.  Allow the port to cool and mix with the red wine vinegar and shallots.

  3.  Whisk in the dijon mustard.

  4.  Whisk in the blended oil and season with salt and pepper.
