Red Pepper Pesto
Ingredients:
6 red bell peppers, roasted, peeled, and seeded
1/2 cup toasted almond slivers
1/2 cup toasted pinenuts
1 tsp. garlic, minced
1/4 tsp. crushed red pepper flakes
4 tbs. minced parsley
2 tbs. sherry vinegar
3 tbs.
extra virgin olive oil
Method:
C
ombine peppers, almonds, pinenuts, and garlic in mortar or food processor.
Pulverize/puree to a smooth paste.
Add remaining ingredients and chill.
