Rock Shrimp Cakes
Ingredients:
8# rock shrimp, rinsed and dried
2 med. red onions, diced
8 celery stalks, diced
6 whole eggs
2 cups
mayonnaise
2 T. cumin, ground
13 cups panko bread crumbs
salt and white pepper to taste
Method:

ombine onions, celery, eggs, and cumin in a large mixing bowl.
F
old in the rock shrimp and allow the egg mix to coat well.
A
dd the aioli and mix well.
A
dd the bread crumbs and mix well by hand.
S
eason with salt and white pepper.
F
orm into 3 oz patties and pan fry.
