Rock Shrimp Cakes

 

 

Ingredients:

8#  rock shrimp, rinsed and dried
2 med. red onions, diced
8 celery stalks, diced
6 whole eggs
2 cups mayonnaise
2 T. cumin, ground
13 cups panko bread crumbs
salt and white pepper to taste

 

Method:

  1. Combine onions, celery, eggs, and cumin in a large mixing bowl.
  2. Fold in the rock shrimp and allow the egg mix to coat well.
  3. Add the aioli and mix well.
  4. Add the bread crumbs and mix well by hand.
  5. Season with salt and white pepper.
  6. Form into 3 oz patties and pan fry.
