Tomato Leek Chutney

 

 

Ingredients:

8 tomatoes, peeled and diced
4 bunches leeks
¼ lb butter
1 Tbsp. chopped garlic
5 Tbsp. brown sugar
½ Cup white balsamic vinegar     
1 Tbsp. pepper
Pinch of Rosemary
Pinch of thyme
Pinch of lavender      
Pinch of salt

 

Method:

  1. Dice leeks, rinse well and sauté in butter for about 5 minutes.
  2. When they are softened add the seasoning and continue to simmer for about 5 more minutes.
  3. Strain through a chinois pressing down on the leeks to extract all the liquid.
  4. Reduce liquid in a pan until it reaches honey color.
  5. Remove it from heat and add it back to the leeks.
  6. Fold in the tomato.
  7. Season with a pinch each of thyme, rosemary, salt, parsley.
