Method:
- Dice leeks, rinse well and sauté in butter for about 5
minutes.
- When they are softened add the seasoning and continue
to simmer for about 5 more minutes.
- Strain through a chinois pressing down on the leeks to
extract all the liquid.
- Reduce liquid in a pan until it reaches honey color.
- Remove it from heat and add it back to the leeks.
- Fold in the tomato.
- Season with a pinch each of thyme, rosemary, salt,
parsley.
